Well first of all because they're here they really are quite extraordinary fellas / know for many many many years / the generation / there was a whole generation of French chefs that were rather insular about French cuisine - they didn't think there was any other cuisine in the world / and these guys are curious, they are very very good at what they do / and what is really remarkable is that they all like each other! / For instance if he makes up something they immediately get on the phone and say hey do you know what I did today / no great big secrets from each other / don't try to protect they're own special recipe / they share everything with each other / it's really a fraternity / really one of the most remarkable group of fellas in any profession I've ever seen
